So what’s a better way to detox and beat the heat than with some matcha coconut ice cream. Throw in a bit of coconut milk and ground coconut flakes to intensify the flavor, and you’ve got a refreshing, detoxing, tropical treat!
Matcha Coconut Ice Cream
1 c. coconut milk
3 Tbs Matcha powder (depending on the quality of your matcha you may need more or less, I’m afraid mine was not very good)
1/2 c. Coconut flakes ground
8 spoons stevia
1/4 c. agave
2 c. non-dairy milk
1. Mix all the ingredients together well (I used a hand-held mixer). Make sure there are no clumps from the matcha powder. Also, it is best to use cold milk.
2. Pour the mix into your ice cream maker and follow the instructions according to your maker.
