Warm cozy fall flavors + fresh ice cream on a hot summer day = awesomness
What is more fall -like than apple crisp?! And what screams summer more than ice cream. . . I’ll tell you what, apple crisp ice cream, that’s what! Put the two together and you get one originally fantabulous flavor to bring to your next bbq that you can pat yourself on the back for. And if you do the ‘what you’re thankful for today’ thing and the ‘what successes to celebrate today’ thing (which I do, by the way to keep the positive energy flowin’ and growin’) then write this down on your list missy, and go right ahead and jot it down on both of them puppies . . . let me help with a little kickstart on how that list should go: awesome execution, controlled indulgence (no fat pants here) and a good dose of antioxidants to fight aging and disease from the apples, you can add the amazing benefits of cinnamon to your list with its fungus fighting, cholesterol lowering and blood sugar stabilizing properties. See, indulging can be so easy, and so good for you!
So get your ice cream maker out along with a super sized spoon to serve it up and chow down.
Servings: 2 ( feel good about indulging, but let’s not have to get the weekend sweatpants out, so keep it in check miss thing)
6 dates, pitted
2 1/2 c. non-dairy milk (I suggest almond, but whatever you have will work)
2 large cooked apples, cored and peeled
1 tsp vanilla extract (alcohol free)
1/3 tsp cinnamon (depends on the quality/freshness)
1/2 c. oats or whatever cereal grain ‘au natural’ you prefer
1/4 c. water
1 Tbs coconut oil
a dash of cinnamon
1. Blend about half the amount of the milk with all the other ingredients. Blend very well and then add in the rest of the milk.
2. Pour the mixture into your ice cream maker and follow the instructions for your maker (the more you let it run the creamier it gets, just not too long obviously).
3. In the meantime, make the crisp by adding all the ingredients together and cooking over a low flame for about 5-8 minutes.
Assembly: I just put the crisp on top but that was definetly a rookie mistake on my part, this calls for some serious layering here. Just make sure you serve it with the crisp part hot, this is what makes it so amazaballs and makes it taste more like a ‘real’ apple crisp.
Optional add-ins or toppings:
raisins (don’t put them directly in the ice cream, they will freeze rock solid, either add them to the crisp or just sprinkle them on top)
