Sun Dried Tomato & Walnut Hummus


Go for a dip in this. 

With fresh crunchy veggies and your b-day suit if you lie, poolside of course. Picture it, sipping on a refreshing glass of lemonade while killing your afternoon craving with this delish humus dip, all while gettin’ your tan on. 

I don’t even need to tout too much on the benefits of walnuts as the whole world and their dog know by now that this little nut packs a nutritious punch with a healthy dose of vitamin E to prevent cognitive decline and omega 3s to lower cholesterol.

Chickpeas offer up protein and a good amount of fiber to hush the growlin’ in the tum tum all while having a low glycimic index, and that means no spikes in blood sugar to keep you feeling fuller longer. Now on to the sun dried tomatoes, which aside from making this extra special, like on vacation special, they are also loaded with b vitamins like thiamine, niacin and riboflavin, which play a key role in converting food to energy, maintaining the nervous system and keeping skin healthy. 

So peel yourself off the sunbed, shimmy inside and whip this up. I promise it won’t interfere with your tan/pool time, it only takes 5 minutes to mash up. . . get dippin’!



Sun Dried Tomato & Walnut Hummus

Servings: about 2


1/4 c. walnuts

1 c. chickpeas

4 sun dried tomatoes (4 halves = 2 full tomatoes)
About 2 Tbs water (depends on how thick you want it)

Optional: tahini, a squeeze of lemon and a dash of cayenne 


1. Put it all in a blender and push the button, that simple, really. So no excuses, just do it and get dippin’.
