Winter Salad + Creamy Lemon Maple Mustard Dressing



I am so excited about so many things to share with you all in this post that I could easily just start spewing them all out in list form- number one has to be these pictures since I just got my photo studio box in the mail the other day. It’s this cute little tent-like box that pops up with interchangeable backgrounds and two super bright lights plus a tripod. It is truly amazing! It makes every picture look so fabulously professional – at least in the eyes of this amateur. To add to this list of exciting things is the black radish I found at the market recently that I just had to try out. Oh but wait it doesn’t stop there – chestnuts, winter veggies, holiday flavors – all in one healthy feel good salad! Woo, now that is some exciting stuff, at least in my world it is :)!

So regardless of how excited you get over salads, I do guarantee you that you will thoroughly enjoy this one as it is a perfect balance between sweet, savory and tangy. The earthiness and sharpness of the black radish is balanced by the sweetness of the apple, while a bit of extra crunch is added with the thinly sliced fennel. All the flavors come together beautifully in a sweet nutty symphony with the finishing touch of the chestnuts, which just make this salad sing with holiday spirit. The tartness of the dressing also helps to balance all of these flavors of sweet and savory while also keeping the pungent flavor of the radish in check. And to give it a hot meaty element is the addition of some sliced grilled vegan sausage. 



Winter Salad

Servings: 2-3

Preferred salad base – I went with chopped kale and butternut lettuce

1/2 fennel bulb, thinly sliced

1/2 apple, thinly sliced

1/2 black radish, thinly sliced

about 1/2 cup boiled chestnuts 

vegan sausage (depending on size, etc. 2-4)


Creamy Lemon Maple Mustard Dressing

Yield:  about 3/4 cup

1/2 tsp English mustard (this is strong stuff so go easy, otherwise if using regular or dijon, you can be heavier handed)

juice of 1 lemon

1 Tbs olive oil

1 1/2 Tbs maple syrup

3 Tbs plain soy yogurt

salt and pepper to taste

*mix together well

  1. I am definitely one that gets excited over salads! This one is beautiful. The addition of chestnuts makes this salad perfect for our upcoming holiday entertaining. I’ve got this one bookmarked!

    • I do understand that, temperatures here are dropping at a chippity chop pace, it’s supposed to snow here Saturday. I am so excited! We are celebrating Thanksgiving Saturday with the fam (since no one has Thursday off here, obviously, we are in Italy and it is and American holiday) and I can’t wait for the holiday feeling of cold weather, snow and good food to come! But if you do feel brave enough to bear the cold on top of cold with a salad, then you should give this one a try 😉
