My Hiatus, Buns and Tigelle

Big news! Buns! Buns in the oven that is! So this should clear me of all blogosphere neglect as I know I have been a bit AWOL but it is totally justified! The Sirotti family is on its way to becoming 4 with another baby boy on the way!

I honestly haven’t been too gung-ho about food or eating lately, in fact everything turned me off and kinda made me wanna barf, which has made cooking and especially getting excited enough about food to take pics, write about it and post about it just nauseating thinking about it. But now that I am over the 3 month hump the skies have cleared, the clouds have parted and the sun is shinning and I am so pumped to start cooking again! I am so inspired, and hungry again – life is good! Continue reading

Buffalo Cauliflower Wrap

As my son continues his hunger strike, and I continue to wheel things out of the kitchen, trying to cater to everyone’s needs, I can’t help but feel this summer cold creeping up on me and curbing my enthusiasm along with my patience. And I really hate that feeling a little sick can get us in a funky mood so easily. I guess my subconcious is trying to answer this call by spicing  things up and giving me a kick where I needed it, all while sweatin’ some germs out with this spicy buffalo cauliflower wrap. It did help me get over a bit of a hump, but I am losing my voice nevertheless  (more the reason for ice cream, which I made tonight, but did not measure or take pictures, it was still yummy with banana, peanut butter and chocolate!). All lamentings aside, I  have choosen to enjoy the night with this wrap and still be thankful for this day of yoga, cooking and spending time with my son . . . what are you thankful for today?

Lunch Idea: Avocado + Peach + Mint Toast with Balsamic Vinegar Drizzle

It’s Wednesday again (my half-day at work), which means I am back with another quick lunch idea. As the temperatures rise to sweltering degrees here in Italy and as the date for my dissertation presentation creeps closer, I am looking for quicker and quicker light lunch ideas. Right now my life is like a 100 meter dash race, I rush home, hurry to get lunch ready and scarf it down in front of the computer as I try to get in the ‘study’ mindset, which really means checking out my favorite sites and allowing myself another 5 minutes, oh wait I just wanna finish reading this, oohhh now that’s interesting, I have to look at that and then I’ll start. . . and then half an hour after I was meant to start I reluctantly open up power point and start practicing my schpiel. This will be going on for another couple of weeks, and then freedom! Then it’s  .  . . pool season, trips to the beach, bike rides in the sun and just plain ol’ having fun in the summer sun with my son!

Mediterranean Wrap

This post is dedicated to my friend Keeley, who recently became vegan. I am so proud of her –  she has been working really hard and is doing an awesome job. She has inspired me with her new found dedication to wellness that she kicked off with a week and half juice fast. I have dedicated this post to her because, aside from the fact that she is my best friend in the world, despite the distance, she is always lovingly honest with me and told me that I should make this more personal, and I think she is 100% right. I have been wanting to make it more personal but have felt a little lost at times on how to do this and also because I have so little time and I love posting so I often just write the essentials and leave out the lovin’. So, thanks to Keeley, I am now going to make it a point to share a bit more about me and not just my recipes, because really, the food is just a part of who I am, but I want my readers to get to know the other sides of me, the mom, wife, friend, spiritual-seeking hippie that I am. Lunch Idea 2: Pesto Infused Artichoke & Hummus Wrap

I’m back again with another ‘non-recipe’ lunch idea. I work half-days on Wednesdays so I’m always thinking about what I can make for lunch that is fast so I can get to doing the other million things I have to do. Wraps, sandwiches and make-ahead things like soup or casseroles always seem to be winners.

I was looking through my latest issue of Vegetarian Times and saw a few recipes for wraps and decided that was it! Lunch is served! But I really didn’t want to go out and buy more stuff so I opted for using what I had on hand and build it around that. I sautéed artichoke hearts and tossed them in some pesto at the end. And that was the hard part! I then slathered on good helping of hummus on my wrap – there is no such thing as too much hummus (especially when it’s homemade)! Tossed in the artichokes, then topped it off with some sun dried tomatoes and a bit of lettuce. And now to let the wrapping begin! Viola, lunch is served!
