Spiced Cranberry Peanut Butter and Cacao Coconut Cashew Spread

spreadsThese recipes came on a whim and they were just easy fun to make spreads that turned out to be pretty darn good! They are great for breakfast on toast, on fruit, or to add in to smoothies. They were so fun to make, and you can really let your imagination run free and come up with all kinds of cool combinations, all you really need is a nut base and then go from there. Without further ado, I give you spiced cranberry peanut butter and what I am calling chocococo spread. Enjoy!

Spiced Cranberry Peanut Butter

Yield: about 1 – 1 1/2 cups

Ingredients:

3/4 c. peanuts

1/4 c. dried cranberries

3/4 water

5 dates

1 tsp cinnamon

nutmeg (I always use freshly grated, so go with your instincts based on whether it’s fresh or not)

Directions:

1. Blend all ingredients together, adding in the water a little at a time until you have reached the consistency that you want. If you like your peanut butter a little chunky set aside some of the peanuts at the beginning and then add them in later, also if you want bigger pieces of the dried cranberries, add them in later as well.

** Some fun add-ins could be:

-chia seeds

– flax seeds

– other spices such as ginger, cloves, etc.

Chocococo Spread

Yield: about 1 cup

Ingredients:

3/4 c. cashews

1/4 c. cacao powder

1/4 c. coconut oil

3-4 measuring spoons of stevia (it depends on the brand you have, mine came with a little measuring spoon)

Directions:

1. Soak the cashews in hot water for at least 30 mins (add in just enough water so that they are covered). Drain the cashews, but save this water.

2. Once the cashews have soaked add all the ingredients together and blend. Add in about half the water used to soak cashews in.

** Once again there are all kinds of other yummy ingredients you can add in here:

– seeds of any kind

– seaweed (in small doses)
